In years gone by, cheese made in summer had a much yellower hue than cheese made in winter because the cows grazed outside rather than on fodder. Yellows and even oranges were seen as a sign of quality in cheesemaking. Cheesemakers started to use annatto, a pigment derived from a tropical fruit, to color their cheese. The evolution of this technique has given us Double Gloucester, an orange, buttery cheese with sweet notes.
