Pecorino Romano, we choose to work with one of the most important cooperatives in Sardegna. While most importers look first at price, we purchase based on quality and consistency of the cheese. Our sourcing is meticulous; the coop uses only whole sheep’s milk from mountain pastures. They produce exceptionally large wheels for Sardegna, weighing around 65 pounds. Aged a minimum of 5-6 months, Mitica® Pecorino Romano is full-flavored, aromatic and sharp. Dry salting gives the cheese pronounced saltiness but it is less salty than the average Pecorino Romano.
