One of the most striking cheeses in our case, Moliterno al Tartufo looks more like rough-cut marble than cheese. This is a result of the unique way of incorporating the truffle flavoring into the cheese. Made on the Italian island of Sardinia with raw sheep’s milk, the unflavored cheese is partially aged, and then pierced and injected with ribbons of black truffle paste. As the truffle paste moves through the cracks and crevices of the cheese, it creates a distinct marble design. Although the truffle presence is assertive, it remains in balance with the cheese itself. It has a pronounced aroma of truffles and earth with a pleasantly crumbly texture.
