Named after the Flat Rock Creek, which runs just south of our farm, and patterned after the French Mountain cheese “Abondance,” Flat Rock is a firm, yet supple, and slightly grainy cheese with a smooth amber-colored rind. It has an assertive aroma and an intensely fruity, buttery and hazelnut flavor, with a balance of acidity and sweetness and a lingering aftertaste. You will unearth a fragrance of bright vegetation as you slice the cheese.
