One of our newest cheese additions is the Red Witch (Rote Hexe). Think of it as an artisanal Gruyere or Appenzeller that’s frighteningly delicious! Made from unpasteurized cow’s milk, it is smooth, creamy, and easy to melt, with a paprika-rubbed red rind. So good, it’s a little scary!
The Old Witch, the older sister of the Red Witch, is aged for a minimum of 9 months, making it spicier and tastier. Unlike her younger sister, it doesn’t have the red rind. Yet, it retains its creaminess and elasticity, offering a well-balanced addition to any cheese plate.
Dilano cheese begins with a base of pasteurized milk and is aged for about six weeks. During preparation, unique ingredients are added, each lending its distinct flavor and color. For example, pesto cheese comes in red or green, lavender cheese is purple, pumpkin cheese is orange, and black lemon is black. The tricolore variety blends red and green peppers with white goat cheese, creating a spicy, colorful delight.
