The Old Witch, the older sister of the Red Witch, is aged for a minimum of 9 months, making it spicier and tastier. Unlike her younger sister, it doesn’t have the red rind. Yet, it retains its creaminess and elasticity, offering a well-balanced addition to any cheese plate.
Dilano cheese begins with a base of pasteurized milk and is aged for about six weeks. During preparation, unique ingredients are added, each lending its distinct flavor and color.
